Pav Bhaji with Keto/Gluten-Free Bread

Pav Bhaji with Keto/Gluten-Free Bread:

Ingredients for Pav Bhaji:
  • 2 cups cauliflower florets
  • 1 cup chopped bell peppers (capsicum)
  • 1 cup chopped tomatoes
  • 1/2 cup chopped onions
  • 1/4 cup chopped carrots
  • 1/4 cup chopped green beans
  • 3-4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1 tablespoon ghee or butter
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 2 teaspoons pav bhaji masala
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Freshly chopped coriander leaves for garnish
  • Lemon wedges for serving

Ingredients for Keto/Gluten-Free Bread:
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 4 large eggs
  • 1/4 cup melted butter or ghee
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

 

Instructions: Prepare the Keto/Gluten-Free Bread:
  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan or line it with parchment paper.
  3. In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt.
  4. In another bowl, whisk together eggs and melted butter/ghee.
  5. Pour the wet ingredients into the dry ingredients and mix until well combined.
  6. Transfer the batter to the prepared loaf pan and smooth the top.
  7. Bake for about 30-35 minutes or until a toothpick inserted into the centre comes out clean.
  8. Let the bread cool completely before slicing into thick slices.
Prepare the Pav Bhaji:
  1. Steam or boil the cauliflower florets until they are soft. Mash them using a potato masher and set aside.
  2. Heat ghee or butter and oil in a pan over medium heat.
  3. Add cumin seeds and let them splutter.
  4. Add chopped onions and sauté until translucent.
  5. Add minced garlic, grated ginger, and green chilies. Sauté for a minute.
  6. Add chopped bell peppers, carrots, and green beans. Cook until the vegetables are tender.
  7. Add chopped tomatoes, pav bhaji masala, turmeric powder, and salt. Mix well and cook until the tomatoes are soft and the mixture becomes mushy.
  8. Add the mashed cauliflower to the pan and mix everything together, mashing any large chunks of vegetables.
  9. Cook for a few more minutes until everything is well combined and the flavours meld together.
  10. Garnish with freshly chopped coriander leaves and a squeeze of lemon juice.
  11. Toast the slices of Keto/Gluten-Free Bread until crispy.

 

Serve the hot Pav Bhaji with butter on top, accompanied by the toasted bread slices and lemon slices.
