Vegetarian Curry

Ingredients:
  • 1 tablespoon extra virgin olive oil
  • ½ cup chopped onion
  • 3 garlic cloves, minced
  • 2 teaspoons minced ginger
  • ½ cup canned crushed tomatoes
  • ½ teaspoon turmeric
  • ½ teaspoon cumin
  • ½ teaspoon cardamom
  • ¼ teaspoon salt
  • Freshly ground black pepper
  • 4 cups cauliflower florets
  • 1 cup canned kidney beans or garbanzo beans (chickpeas), drained and rinsed
  • ½ cup frozen peas, thawed
  • ¼ cup chopped fresh parsley
Instructions:
  1. Heat a large pot with a lid and add the extra virgin olive oil. Sauté onion, garlic, and ginger over medium heat for 5 minutes, stirring occasionally.
  2. Add crushed tomatoes and 1 1⁄2 cups of water. Turn off the heat and mix in turmeric, cumin, cardamom, salt, and pepper to create the curry sauce.
  3. Add cauliflower, beans, and peas to the pot, coating them with the curry sauce. Cover and simmer for 7 to 8 minutes until the cauliflower is fork-tender.
  4. Stir in chopped parsley.
  5. Serve the vegetables, beans, and sauce over brown rice.
