Recipe for Chicken Curry

Recipe for Chicken Curry:

Ingredients:
  • 1 tablespoon extra virgin olive oil
  • ½ cup chopped onion
  • 3 garlic cloves, minced
  • 2 teaspoons peeled, minced fresh ginger
  • ½ cup canned crushed tomatoes
  • ½ teaspoon turmeric
  • ½ teaspoon cumin
  • ½ teaspoon cardamom
  • ¼ teaspoon salt
  • Freshly ground black pepper
  • 1 pound skinless, boneless chicken breasts
  • Olive oil spray
  • 3 tablespoons whole wheat flour or all-purpose flour
  • ¼ cup chopped fresh parsley
Instructions:
  1. To make the curry sauce, heat a large pot with a lid and add the extra virgin olive oil. Sauté onion, garlic, and ginger over medium heat for 5 minutes, stirring occasionally. Add crushed tomatoes and 1½ cups water. Turn off the heat and mix in turmeric, cumin, cardamom, salt, and pepper to create the curry sauce.
  2. Before adding the chicken to the curry, brown it separately for added flavor. Heat a nonstick frying pan and coat it with olive oil spray. Cut chicken into 1-inch cubes. Spread flour across a plate and dredge chicken in flour to coat well. Cook chicken in the pan for 5 minutes over medium heat, turning, until lightly browned on all sides.
  3. Place the browned chicken in the pot with the curry sauce and coat well. Stir in chopped parsley. Cover the pot and bring to a boil, then lower the heat and simmer for 20 minutes.

 

Serve chicken and sauce over brown rice.
