Egg Curry Tikka

Ingredients:
  • 6 hard-boiled eggs, peeled and halved lengthwise
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 tablespoons yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala powder
  • Salt to taste
  • 2 tablespoons oi
  • Fresh coriander leaves, chopped, for garnish
For the Tikka Marinade:
  • 1/4 cup yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala powder
  • Salt to taste
Instructions:
  1. In a bowl, combine all the ingredients for the tikka marinade. Mix well.
  2. Add the halved boiled eggs to the marinade and coat them evenly. Allow them to marinate for at least 30 minutes in the refrigerator.
  3. Heat 1 tablespoon of oil in a pan over medium heat. Add the marinated eggs and shallow fry until they turn golden brown on all sides. Remove the eggs from the pan and set them aside.
  4. In the same pan, add another tablespoon of oil. Add the chopped onions and sauté until they turn golden brown.
  5. Add the ginger-garlic paste and sauté for a couple of minutes until the raw smell disappears.
  6. Add the chopped tomatoes and cook until they turn soft and mushy.
  7. Stir in the cumin powder, coriander powder, turmeric powder, red chili powder, garam masala powder, and salt. Mix well and cook the spices for a few minutes.
  8. Add the yogurt to the pan and mix until well combined with the spices.
  9. Pour in some water to adjust the consistency of the curry. Bring the curry to a gentle simmer.
  10. Gently add the fried eggs to the curry and simmer for a few more minutes to allow the flavors to meld.
  11. Garnish with chopped fresh coriander leaves before serving.
  12. Serve hot with rice or roti.
